This post makes me so happy both fall and pancakes make a perfect combination! Just imagine waking up and having a breakfast that tastes like fall I know… it sounds weird but if fall had to be a food it would be these pancakes.To make this recipe I had four failed attempts and the 5th one was the one! It’s vegan, VEGAN! it also contains protein but it is not essential it is just optional if you would like to add it. The batter makes up for  7-10 pancakes I could make 9 and each pancake is around 83 calories.  You will love this breakfast!


1 Cup Milk
1 Banana
1 1/2 Cup Oats
1 Scoop Vega protein or any protein you like
1/4 Cup Shredded Carrots
1 Pinch Cinnamon
1  Pinch Nutmeg
Walnuts (optional)
-Add all ingredients to a blender. Mix until smooth.

-Wait for the pan to get hot and add coconut oil or any oil you like.

-Place mixture until bubbles start appearing (You can add walnuts while the mixture is cooking)  and flip pancakes.

Toppings :

1 oz. Cream Cheese (optional for vegetarians)
and sweetener of choice I recommend stevia or powdered sugar
Shredded Carrots
Few slices of Banana


-Add: Add your choice of sugar to the cream cheese until you feel like it’s sweet enough.

-Add it to pancake as if it was a jam

-Add banana and carrots on top for better tasting
