This chickpea Blondies are a vegan dessert option when I first saw the ingredients I was not sure about the combination but when I tasted them… They were delicious, it was worth it. They taste really good and I didn’t have that after guilt of eating something so sweet. It is the perfect combination since they’re vegan and a healthy dessert choice.


1 cup of chickpeas rinse and drain

1/3 cup of rolled oats

1/3 cup pumpkin purée

1/3 cup maple syrup

1/4 almond butter

1/4 tsp of salt

3/4 tsp baking soda

1/2 tsp cinnamon

1/8 baking soda

vegan chocolate chips (optional)

1.) Mix all ingredients in blender. Blend until smooth

2.) Add coconut oil to tray so mixture doesn’t stick

3.) Place batter and vegan chocolate chips to tray

4.) Bake for 26-28 min at 350
