This recipe is from Amanda from Running with spoons (Thanks Amanda!) I really liked this recipe because it is simple to make and it is gluten free.This recipe is perfect for a healthy sweet breakfast it contains simple to find ingredients such as greek yogurt, oats and apple sauce. This recipe is perfect for when fall comes.

I love making pancakes but what I liked about this recipe in particular is that you don’t make a mess while cooking them.  I recommend using maple syrup on top and pecans.


For the pancakes
  • 1/4 cup (60 g) plain Greek yogurt
  • 1/2 cup (40 g) rolled oats
  • 1/2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 cup (60 g) unsweetened applesauce
  • 1 large egg white
  • 1 – 2 Tbsp (15 – 30 ml) unsweetened almond milk*
  • optional: 1/2 Tbsp (8 ml) sweetener honey or maple syrup
For the sautéed apples:
  • 1 tsp (5 ml) coconut oil
  • 1 Tbsp (15 ml) maple syrup
  • 1/2 apple in slices
  • 1/2 tsp ground cinnamon

1.) Bring all the ingredients together in a blender. Blend everything until batter is smooth.

2.) Put cooking spray or coconut oil in skillet and drop batter until bubbles begin to form.

3.) In another skillet  coconut oil and maple syrup. When the oil has melted add apples and cinnamon for about 8-10 minutes.

4.)Use sautéed apples as toppings with maple syrup or honey.
